Chez Noir & Monterey Bay Fisheries Trust - A Get Hooked Dinner

In January of this year, we had the privilege of hosting the Monterey Bay Fisheries Trust, a nonprofit organization dedicated to promoting sustainable fishing practices throughout the Monterey Bay area. It was a night filled with meaningful conversation, shared stories, and a deep appreciation for the fishermen who work tirelessly to protect our ocean ecosystems.

Chef Jonny Black, whose passion for local, sustainable produce and proteins runs deep, was able to share his commitment to these causes with the group that joined us that evening. We’re thrilled to pass that message along to you.

“As chefs, we have a profound responsibility—not only to the food we create, but to the ecosystems and communities that make it possible,” Jonny began. “Here on the Central Coast, we are incredibly fortunate to have access to some of the best seafood in the world. But that privilege doesn’t come without its challenges. Our fisheries face immense pressures, from environmental changes, to regulatory complexities, and economic hurdles. This makes the work of organizations like the Monterey Bay Fisheries Trust more vital than ever.

The Monterey Bay Fisheries Trust goes beyond protecting our fisheries; they are stewards of sustainability, ensuring that future generations will continue to enjoy the incredible bounty of our waters. The Trust supports local fishermen, advocates for sustainable practices, and helps us all understand the delicate balance of our oceans.

What makes their work even more special is their collaboration with chefs like myself. They don’t just provide access to responsibly caught seafood—they provide stories. Stories of the people, places, and passions behind the food, allowing chefs to bring those narratives to the plate. This connection enriches the dining experience, reminding us that food is more than just sustenance—it’s a celebration of community and the world around us.

Thank you for being here tonight, and thank you to the Trust for everything you do. Let’s enjoy this meal together as a celebration of sustainability, community, and, above all, the ocean we all love. We hope this meal serves as a reminder of the vital work being done to protect our oceans, and we’re honored to play a small part in supporting the Monterey Bay Fisheries Trust’s mission.” Jonny concluded.

The evening’s menu was crafted with that very philosophy in mind. Each dish represented a collaboration between local fishermen, farmers, and artisans, showcasing the extraordinary work of the Monterey Bay Fisheries Trust.
